  • 14 oz extra-firm tofu
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 medium onion
  • 3 cloves garlic
  • 1 tablespoon fresh ginger
  • 3 tablespoons cornstarch
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup

Instructions

  1. Press the tofu between clean towels for 15 minutes to remove excess moisture, then cut it into 1-inch cubes and coat with cornstarch.
  2. Heat oil in a cast iron skillet over medium-high heat. Add the tofu in a single layer and cook for about 3-4 minutes on each side until golden brown.
  3. Remove the tofu and add sliced bell peppers and onions to the same pan, cooking until they begin to caramelize (about 5 minutes).
  4. Stir in minced garlic and ginger; cook until fragrant (30 seconds).
  5. Add pineapple chunks and let them caramelize for an additional 2-3 minutes.
  6. Mix soy sauce, rice vinegar, and maple syrup in a small bowl; pour over the vegetable mixture. Return the crispy tofu to the pan and stir gently for about 2 minutes until everything is well combined.
