  • 35 chocolate creme cookies
  • 5 tbsp unsalted butter
  • 24 oz cream cheese
  • 8 oz mascarpone cheese
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • ½ cup strong black coffee
  • 1 cup heavy cream
  • Cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a springform pan.
  2. Grind the cookies and mix with melted butter to form the crust.
  3. Bake the crust for 7–8 minutes and allow it to cool.
  4. Beat cream cheese, mascarpone, sugar, vanilla, and salt until smooth.
  5. Add eggs one at a time, followed by heavy cream and sour cream; mix gently.
  6. Layer half the batter over the crust, followed by dipped ladyfingers, then pour remaining batter on top.
  7. Bake in a water bath at 320°F (160°C) for about 80 minutes until edges are firm.
  8. Cool completely, refrigerate overnight, then prepare topping with whipped cream and cocoa dusting.
