  • 2 pounds boneless, skinless chicken thighs or breasts
  • 1 cup creamy peanut butter
  • 1 cup coconut milk
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Chopped green onions for garnish
  • Crushed peanuts for garnish

Instructions

  1. Trim excess fat from the chicken and cut into bite-sized pieces.
  2. In a mixing bowl, whisk together peanut butter, coconut milk, soy sauce, honey, rice vinegar, ginger, garlic, and red pepper flakes until smooth.
  3. Place chicken in the bottom of the crockpot and pour the peanut sauce over it.
  4. Cover and cook on low for 4-6 hours or high for 2-3 hours until chicken is tender.
  5. Shred the chicken using two forks directly in the crockpot to absorb more sauce.
  6. Serve over cooked rice or noodles and garnish with green onions and crushed peanuts.
