  • 6 bell peppers
  • 1 lb lean ground beef
  • 1 onion, diced
  • 2 cups cooked brown rice
  • 14.5 oz can diced tomatoes
  • 18 oz can black beans, drained & rinsed
  • 15 oz can corn, drained & rinsed
  • 1 taco seasoning packet
  • 1 1/2 cup shredded cheddar jack cheese

Instructions

  1. Preheat the oven to 350°F.
  2. Wash and halve the bell peppers, removing seeds.
  3. Bake halved peppers in a dish for about 5 minutes.
  4. In a skillet over medium heat, sauté diced onion until soft. Add garlic powder and chili powder.
  5. Cook ground beef in the skillet until browned.
  6. Stir in diced tomatoes, black beans, corn, cooked rice, and taco seasoning; adjust seasoning as needed.
  7. Fill each pepper with the mixture; cover with foil and bake for 10 minutes.
  8. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 15 minutes until cheese melts.
