  • ½ cup onion (chopped)
  • ½ cup carrots (chopped)
  • 2 cups bread flour
  • 1 ¼ cups buttermilk
  • 1 tbsp fresh thyme
  • 1 tbsp fresh sage
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp granulated sugar
  • 8 tbsp unsalted butter (melted then cooled, divided)
  • 1 tsp fresh rosemary (chopped)

Instructions

  1. Prepare the Vegetables: Pulse celery, onion, carrots, thyme, sage, salt, and pepper in a food processor until finely chopped.
  2. Sauté the Mixture: Heat olive oil in a skillet over medium heat; add the vegetable mix and sauté for 10-12 minutes until softened. Let cool.
  3. Preheat Oven: Set oven to 425°F (220°C). In a bowl, combine flour, baking powder, baking soda, sugar, and salt.
  4. Combine Wet Ingredients: In another bowl, whisk together buttermilk and 4 tbsp melted butter; add to dry ingredients and stir until dough forms.
  5. Mix Vegetables & Bake: Fold in cooled vegetable mixture. Drop spoonfuls onto a baking sheet and bake for 12 minutes.
  6. Add Topping: Mix remaining melted butter with rosemary; brush on biscuits after initial baking time and return to oven for an additional 6-8 minutes until golden brown.
