  • 10 mini pumpkins
  • 1 lb ground beef
  • 1 can (15 oz) pumpkin puree
  • 1 large yellow onion, diced
  • 2 garlic cloves, minced
  • 6 tbsp olive oil
  • 2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tsp pumpkin pie spice
  • 1/2 tbsp fresh thyme
  • 1/2 tbsp fresh oregano
  • 1/2 tbsp fresh sage, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse mini pumpkins and cut off the tops; scoop out seeds.
  3. In a skillet, heat olive oil and sauté onion and garlic until fragrant.
  4. In a bowl, mix sautéed onion and garlic with ground beef, pumpkin puree, spices, and herbs.
  5. Grease a baking dish; place pumpkins inside and fill with stuffing.
  6. Roast for 30 to 35 minutes until pumpkins are tender.
