  • 6 small flour tortillas
  • ½ cup granulated sugar
  • 1 tbsp ground cinnamon
  • ½ cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup heavy whipping cream
  • 1 cup fresh or frozen strawberries, chopped
  • ¼ cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Preheat oven to 375°F (190°C). Mix granulated sugar and cinnamon in a bowl. Brush melted butter on both sides of each tortilla and coat in the cinnamon-sugar mixture. Place over an oven rack or baking sheet and bake for 8–10 minutes until crisp. Cool completely.
  2. In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth. In another bowl, whip heavy cream until stiff peaks form, then fold into the cream cheese mixture. Transfer mixture to a piping bag.
  3. For the strawberry topping, simmer chopped strawberries with sugar and lemon juice in a saucepan until juices release (about 5 minutes). Stir in cornstarch slurry until thickened (about 2–3 minutes) and cool.
  4. Assemble by piping cheesecake filling into taco shells and topping with cooled strawberry sauce just before serving.
