  • 2 cups uncooked rice
  • 3 large chicken breasts, cut into bite-sized pieces
  • 2 small heads of broccoli, chopped
  • ½ cup soy sauce
  • ½ cup honey
  • ¼ cup rice vinegar
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano
  • 3 cloves garlic, minced
  • 2 tbsp sriracha
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 2 tsp arrowroot powder
  • 2 tbsp water
  • ½ cup mayonnaise
  • 2–3 tbsp water (for mayo)
  • sesame seeds

Instructions

  1. 1. Rinse rice under cold water until water runs clear. In a cooking pot, add rinsed rice along with 4 cups of water. Bring to a boil. Reduce heat to low, cover with a lid, and simmer for about 18-20 minutes until fully cooked. Fluff with a fork once done.
  2. 2. While rice is cooking, preheat your air fryer at 380°F (190°C). In a mixing bowl, combine cut chicken pieces with olive oil, salt, pepper, chili powder, smoked paprika, onion powder, oregano; mix well until coated evenly. Place seasoned chicken into air fryer basket in an even layer; cook for about 15 minutes or until crispy on outside and cooked through.
  3. 3. While chicken is cooking in air fryer, steam chopped broccoli until bright green and tender-crisp; around 5-7 minutes should suffice.
  4. 4. In another mixing bowl whisk together soy sauce, honey, rice vinegar, minced garlic, sriracha, sesame oil; set aside. Combine arrowroot powder slurry into sauce mixture; stir until thickened slightly over medium heat on stovetop.
  5. 5. Layer cooked rice at bottom of serving bowls; top with crispy chicken pieces followed by steamed broccoli. Drizzle sticky sauce generously over each bowl before finishing with spicy mayo drizzle made by mixing mayonnaise with remaining sriracha adjusted with water as needed.
