  • 2-inch piece fresh ginger
  • 2 serrano peppers
  • 1 tsp ground cumin
  • 1 tsp cayenne pepper
  • ½ tsp ground coriander
  • 2 tsp curry powder
  • 1 tsp garam masala
  • 1 tsp ground turmeric
  • 1 tsp kosher salt
  • 1 tsp freshly cracked black pepper
  • 1 can full-fat coconut milk
  • 1 can crushed tomatoes
  • 1 tbsp lemon juice
  • ½ cup fresh cilantro

Instructions

  1. Rinse the lentils under cold water until clear. Soak overnight or for at least 6 hours.
  2. Heat oil in a large deep skillet over medium-high heat. Sauté garlic, ginger, and serrano peppers for about 3 minutes.
  3. Add spices and cook until fragrant (30–60 seconds).
