  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Pink food coloring (optional)
  • 4 ounces cream cheese, softened
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract
  • ½ cup strawberry jam
  • Pink glaze (made with powdered sugar and a few drops of milk)
  • Sparkling sugar for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a mixing bowl, combine flour, baking powder, and salt; set aside.
  4. In another bowl, cream together softened butter and granulated sugar until light and fluffy using an electric mixer.
  5. Beat in the egg and vanilla extract until well combined. If using pink food coloring, add it now until desired color is achieved.
  6. Gradually mix in the dry ingredients into the wet mixture until just combined.
  7. In another bowl, beat together softened cream cheese, powdered sugar, vanilla extract, and strawberry jam until smooth.
  8. Using a cookie scoop, drop cookie dough onto the prepared baking sheet. Make an indentation in each dough ball and fill with cheesecake mixture.
  9. Bake in preheated oven for about 12-15 minutes or until edges are lightly golden.
  10. Allow cookies to cool on wire racks. Drizzle with pink glaze once cooled, then sprinkle with sparkling sugar for garnish.
