  • 50g Granulated Sugar
  • 2 1/4 tsp active dried yeast
  • 2 large eggs, at room temperature
  • 1/2 tsp kosher salt
  • 565g All-Purpose Flour
  • 100g Unsalted Butter, at room temperature
  • 850g – about four medium apples, peeled, cored, and diced small
  • 30g Unsalted Butter for filling
  • 80g Granulated Sugar for filling
  • 1/2 tsp ground cinnamon for filling
  • 1/4 tsp Kosher salt for filling
  • 1 Tbsp Corn starch for filling
  • 125g Pecan Halves
  • 190g Unsalted Butter for cinnamon filling
  • 280g Brown Sugar for cinnamon filling
  • 2 Tbsp plus 1 tsp ground cinnamon for cinnamon filling
  • 1/8 tsp Kosher salt for cinnamon filling
  • 115g Unsalted Butter for frosting
  • 225g Cream Cheese, at room temperature
  • 250g Powdered Sugar, sifted
  • 12 Tbsp Heavy Whipping Cream
  • 1/2 tsp kosher salt for frosting

Instructions

  1. Warm whole milk and combine it with granulated sugar and yeast; let sit until frothy.
  2. Mix in eggs and salt, then gradually add flour to form dough. Knead in softened butter until smooth.
  3. Allow the dough to rise until doubled in size.
  4. Prepare the apple filling by cooking diced apples with butter, sugar, cinnamon, and cornstarch.
  5. Roll out the risen dough into a rectangle, spread softened butter, sprinkle with brown sugar and cinnamon, then add apple filling and pecans.
  6. Roll tightly, slice into pieces, and let rise again until puffy.
  7. Bake at 350°F for 25-30 minutes until golden brown.
  8. While baking, prepare cream cheese frosting and frost rolls once cooled slightly.
