This Midwestern classic features tender, shredded chuck roast simmered to perfection in a rich beef broth, served over fluffy mashed potatoes and thick slices of bread, all generously topped with savory brown gravy.

Ingredients

Scale
  • 22.5 pounds chuck roast
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 68 slices thick sandwich bread (white or sourdough)
  • 4 cups mashed potatoes (homemade or store-bought)
  • 2 cups brown gravy

Instructions

  1. Season the chuck roast with garlic powder, onion powder, salt, and pepper evenly on all sides.
  2. In a skillet, heat olive oil over medium-high heat and sear the roast on all sides for about 3–4 minutes.
  3. Place the seared roast in the slow cooker and add beef broth and Worcestershire sauce.
  4. Cover and cook on low for 8 hours or high for 4–5 hours until fork-tender.
  5. Shred the beef using two forks and return it to the slow cooker to absorb more juices.
  6. Serve by placing a slice of bread on a plate, topping it with mashed potatoes, shredded beef, and ladling warm gravy over everything.
