  • 2 large eggplants
  • 2 tbsp olive oil
  • 1 white onion (diced)
  • 3 cloves garlic (minced)
  • 1 lb ground beef (or lamb)
  • 2 cups crushed canned tomatoes
  • 2 tbsp Turkish red pepper paste
  • Fresh mint (for garnish)
  • 2 tbsp Greek yogurt
  • 1 lemon (juiced)

Instructions

  1. Preheat oven to 400°F. Cut eggplants into large pieces, drizzle with olive oil, and season with salt and black pepper. Toss to coat.
  2. Roast eggplants for about 30 minutes until tender. Set aside.
  3. In a large fry pan, heat remaining olive oil over medium-high heat. Sauté onions and garlic with spices until onions brown.
  4. Add ground beef to the pan and cook until browned. Stir in roasted eggplant, crushed tomatoes, and Turkish red pepper paste; cover and simmer for 20 minutes.
  5. For the yogurt sauce, mix Greek yogurt, minced garlic, fresh dill, and lemon juice in a bowl.
  6. Serve hot moussaka garnished with fresh mint alongside yogurt sauce.
