  • 2 tbsp oil
  • 1 ½ cup dried white kidney beans
  • 1 ½ cup dried Romano beans
  • 2 onions (finely diced)
  • 2 carrots (shredded or diced)
  • 1 bay leaf
  • 4 cloves garlic (grated)
  • 1 tbsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Soak the beans in water for at least 6 hours, then drain. Boil in fresh water for 20 minutes, then set aside.
  2. In a large pot, heat oil over medium heat. Sauté onions and carrots with salt until softened (about 5 minutes).
  3. Add soaked beans, bay leaf, and enough water to cover everything. Simmer on medium heat for 40-45 minutes.
  4. In a separate pan, melt some oil, add garlic, cook briefly, then stir in flour and smoked paprika to create a thickener.
  5. Slowly mix the thickener into the soup while stirring. Let simmer for an additional 5 minutes before serving.
