  • 2 lbs ground beef
  • 1 tbsp olive oil
  • 1 red bell pepper, finely chopped
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • ¾ cup Italian-style breadcrumbs
  • ½ cup grated parmesan cheese
  • 2 eggs
  • 2 tbsp tomato paste
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 1215 large fresh basil leaves
  • 1 ¼ cup shredded mozzarella cheese
  • Marinara sauce (for serving)
  • Cooked pasta or zucchini noodles (if desired)

Instructions

  1. Preheat the oven to 350°F.
  2. Sauté chopped onion and bell pepper in olive oil until soft. Add minced garlic and cook until fragrant.
  3. In a large mixing bowl, combine ground beef, breadcrumbs, parmesan cheese, eggs, tomato paste, sautéed vegetables, salt, pepper, and parsley; mix well.
  4. Shape the mixture into a rectangle on parchment paper and layer with chicken slices, basil leaves, and mozzarella cheese.
  5. Roll the meatloaf tightly using the parchment paper to guide you; seal the ends.
  6. Place seam-side down on a baking sheet lined with parchment paper and bake for 1 hour.
  7. Let rest for 10 minutes before slicing; serve with marinara sauce over pasta or zucchini noodles.
