  • 24 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 3 cups peeled and sliced apples
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 2 tbsp all-purpose flour
  • 1 cup granulated sugar (for caramel sauce)
  • 6 tbsp unsalted butter (for caramel sauce)
  • 1/2 cup heavy cream (for caramel sauce)
  • 1 tsp sea salt (for caramel sauce)

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Combine graham cracker crumbs, granulated sugar, and melted butter; press into a springform pan and bake for 10 minutes. Cool completely.
  3. Mix apples with brown sugar, cinnamon, and flour; spread over cooled crust.
  4. Beat cream cheese and sugar until smooth; add eggs one at a time, mixing well after each addition. Stir in vanilla and sour cream.
  5. Pour cheesecake filling over apples; bake for 60-70 minutes until nearly set.
  6. Cool at room temperature then refrigerate for at least 4 hours or overnight.
  7. Prepare salted caramel sauce by melting sugar in a saucepan until amber; stir in butter and cream, then mix in sea salt.
  8. Drizzle caramel over chilled cheesecake before serving.
