  • 2 red bell peppers
  • 12 onions (peeled and halved)
  • 1 whole garlic bulb
  • 3 tbsp olive oil
  • 2 cups vegetable stock
  • 3.4 fl oz oat cream or coconut milk
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Place sweet potatoes, carrots, bell peppers, onions, and garlic in a roasting tin. Drizzle with olive oil and season with salt and pepper.
  3. Cover with foil and roast for 45-50 minutes until tender.
  4. Allow cooling slightly, then squeeze out garlic from its skin.
  5. Transfer roasted vegetables to a saucepan with vegetable stock; blend until smooth.
  6. Stir in oat cream; adjust seasoning as needed.
  7. Reheat gently over medium heat, serve hot, garnished with fresh herbs.
