  • 3 tablespoons olive oil
  • 1 head garlic
  • 1 medium yellow onion, diced
  • 4 cups vegetable broth
  • 1 heaping cup shredded sharp cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Toss cauliflower florets with olive oil, salt, and pepper on the baking sheet. Prepare garlic by cutting off the top, drizzling with oil, wrapping in foil, and placing it on the sheet.
  3. Roast for 30-35 minutes until golden brown, flipping halfway.
  4. While roasting, sauté diced onion in a pot with remaining olive oil until translucent (about 5-8 minutes).
  5. In a blender, combine sautéed onion, roasted cauliflower, squeezed garlic cloves from their skins, broth, salt, and pepper; blend until smooth.
  6. Return mixture to the pot over medium heat. Stir in cheddar cheese and simmer for 10-15 minutes. Adjust seasoning as needed and serve warm.
