  • 1/4 tsp salt
  • 1/2 cup vegan mini marshmallows
  • 1/2 cup semi-sweet chocolate chips or chunks

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine almond butter, brown sugar, egg, pumpkin puree, and vanilla extract until well mixed.
  3. In another bowl, whisk together almond flour, pumpkin pie spice, baking soda, and salt; then mix into the wet ingredients until fully incorporated.
  4. Gently fold in chocolate chips and vegan marshmallows.
  5. Use a cookie scoop to portion dough onto the prepared baking sheet. Ensure some marshmallows peek out for extra gooeyness.
  6. Bake for 10–12 minutes until slightly golden, then allow to cool before enjoying.
