Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk together oil, sugar, and vanilla. Add pumpkin puree, eggs, and milk; mix until combined.
  3. In another bowl, combine flour, baking soda, baking powder, salt, and pumpkin pie spice. Gradually mix into wet ingredients.
  4. For the filling: Beat cream cheese with sugar until smooth; add egg and vanilla.
  5. Line muffin pans with paper liners and fill each muffin cup with batter about two-thirds full. Spoon cream cheese mixture on top.
  6. Use a knife to gently swirl the batters together.
