  • 1/4 cup granulated sugar
  • 8 tablespoons unsalted butter (melted)
  • 11/4 cups pumpkin puree
  • 11/2 teaspoons pumpkin pie spice
  • 3 packages (8 oz each) full-fat cream cheese
  • 12/3 cups granulated sugar
  • 11/2 teaspoons pure vanilla extract
  • 1/2 cup full fat sour cream
  • 1/8 teaspoon salt
  • 3 large eggs

Instructions

  1. Preheat your oven to 350°F. Line a 9×13 baking pan with foil and lightly grease it.
  2. For the crust, crush graham crackers into fine crumbs, mix with sugar and melted butter, then press firmly into the pan.
  3. For the filling, beat cream cheese and sugar until smooth. Add pumpkin puree, spices, flour, salt, sour cream, and eggs; mix until well combined.
  4. Pour half the filling over the crust, dollop remaining filling on top, and swirl gently.
  5. Bake for about 50 minutes until set in the center. Cool completely before slicing.
