  • 1 cup finely chopped walnuts
  • 1 cup almond flour
  • 1/2 cup white sugar
  • 1/4 cup salted butter, melted
  • 6 oz pumpkin puree
  • 2/3 cup white sugar
  • 2 eggs
  • 2 8 oz cream cheese, room temp
  • 1 tsp pumpkin spice
  • 1/2 tsp cinnamon
  • 1/3 cup white sugar
  • 1/3 cup brown sugar
  • 1/4 cup oats
  • 1/2 cup flour
  • 6 T salted butter, softened
  • 1 tsp vanilla

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. For the walnut crust, mix chopped walnuts, almond flour, sugar, and melted butter until combined; press into the bottom of the baking dish.
  3. In a bowl, beat cream cheese with sugar until smooth; add eggs one at a time. Reserve 1½ cups of this mixture for later.
  4. Add pumpkin puree and spices to the remaining mixture; blend well.
  5. Pour the plain cheesecake layer over the crust, then carefully layer the pumpkin cheesecake mixture on top.
  6. Prepare the streusel by mixing sugars, oats, flour, softened butter, and vanilla until crumbly; sprinkle over the pumpkin layer.
  7. Bake for 60-70 minutes or until set but slightly jiggly in the center.
  8. Allow to cool before chilling in the fridge for at least two hours before cutting.
