  • 16 oz dry orzo
  • 2 cups cooked chicken (diced)
  • 3 cups chicken stock (unsalted)
  • 1 cup heavy cream
  • 5 cloves garlic (minced)
  • 2/3 cup parmesan cheese (grated)
  • 1.5 cups mozzarella cheese (shredded)
  • 3 cups baby spinach (chopped)
  • 1 pint cherry tomatoes
  • Juice of 1/2 lemon
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, bring water to a boil and cook the orzo until al dente; drain and set aside.
  3. In the same skillet, sauté the cooked chicken with minced garlic for 2–3 minutes until aromatic.
  4. Stir in chicken stock, heavy cream, spinach, and cherry tomatoes until the spinach wilts.
  5. Mix in grated parmesan until melted; top with shredded mozzarella.
  6. Bake for 25–30 minutes until the cheese is golden brown and bubbly.
  7. Allow to cool slightly before serving.
