  • 1 cup panko bread crumbs
  • 1 cup milk
  • 1 medium yellow onion (diced)
  • 2 cloves garlic (minced)
  • 1 tablespoon butter
  • 2 pounds ground beef
  • 1 large egg
  • 1 tablespoon vinegar
  • 1/2 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • For Topping: 1/2 cup ketchup
  • 1 tablespoon brown sugar
  • 1 tablespoon spicy brown mustard

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. In a bowl, combine panko bread crumbs and milk; mix well.
  3. In a sauté pan, melt butter over medium-high heat. Add diced onion and cook until fragrant, about 3-5 minutes. Lower heat, add minced garlic, and cook for another 2 minutes. Let cool.
  4. In a large bowl, mix ground beef, egg, soaked bread crumbs, vinegar, thyme, salt, and the sautéed onions and garlic until just combined. Shape into a loaf and place on the baking sheet; score the top with a crisscross pattern.
  5. Bake uncovered for about 40 minutes. Meanwhile, mix ketchup, brown sugar, and mustard in a bowl.
  6. After 40 minutes of baking, spread the sauce over the meatloaf and continue baking until it reaches an internal temperature of 160°F (about another 30-35 minutes).
