  • ⅓ cup brown sugar
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp allspice
  • ¼ tsp ground ginger
  • Pinch of salt
  • 1 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch slurry
  • Premade pie dough (enough for 2 crusts)
  • Egg wash ingredients (1 beaten egg + 1 tbsp milk/cream)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine the diced apples with brown sugar and all spices. Mix in butter, vanilla extract, and cornstarch slurry.
  3. Roll out pie dough and cut into circles (about 4 inches in diameter).
  4. Place dough circles in muffin tins. Fill each with apple mixture and cover with another dough circle; crimp edges to seal.
  5. Brush tops with egg wash and sprinkle with coarse sugar.
  6. Bake for approximately 25 minutes until golden brown.
