  • 1 lb ground chicken
  • 1 medium onion, diced
  • 3 tablespoons olive oil
  • 1 cup baby spinach, chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. In a skillet over medium heat, sauté diced onion in 1 tablespoon olive oil until translucent. Add minced garlic and cook for an additional 30 seconds before removing from heat.
  2. In a mixing bowl, combine sautéed onion and garlic with chopped spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix until well combined.
  3. Shape the mixture into approximately eight patties (½ inch thick).
  4. Heat remaining olive oil in the skillet over medium heat and cook patties for about 5-6 minutes on each side until golden brown.
  5. Drain on paper towels and serve warm.
