  • 4 whole fish fillets (such as snapper or cod)
  • 2 tablespoons olive oil
  • 1 lemon (zested and juiced)
  • 3 cloves garlic (minced)
  • 1 onion (sliced)
  • 1 bell pepper (sliced)
  • 1 zucchini (sliced)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup fresh parsley (chopped)
  • 1 tablespoon fresh dill (chopped)
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a baking dish with olive oil.
  3. Pat the fish fillets dry, then season both sides with salt, black pepper, and dried oregano.
  4. In a skillet, heat olive oil over medium heat. Sauté sliced onions until translucent, then add bell pepper and zucchini; cook until tender. Stir in garlic and cook for another minute.
  5. Spread sautéed vegetables in the baking dish and place seasoned fish on top.
  6. Scatter cherry tomatoes, parsley, and dill over the fish, drizzle with lemon juice, and sprinkle lemon zest.
  7. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 5-10 minutes until fish flakes easily.
  8. Let cool for a few minutes before garnishing with extra herbs and lemon wedges.
