  • ½ cup vegetable broth
  • 1 (15 oz) can white beans (drained and rinsed)
  • ¼ cup sun-dried tomatoes (sliced)
  • ½ cup spinach
  • ½ cup heavy cream (plus more as needed)
  • ¼ cup fresh basil (chopped)

Instructions

  1. In a large skillet over medium heat, sauté the minced onion in oil until softened. Add garlic and cook for another 30 seconds until fragrant.
  2. Stir in tomato paste, salt, oregano, paprika, and red pepper flakes. Cook for 2 minutes to meld flavors.
  3. Add vegetable broth, white beans, and sun-dried tomatoes. Cook for an additional 4-5 minutes, stirring occasionally.
  4. Lower the heat and mix in spinach and cream until the spinach wilts and the mixture becomes creamy.
