  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • ½ cup finely diced red onion
  • 4 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 4 oz full-fat cream cheese, softened and cubed
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes, julienned
  • Grated Parmesan cheese for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the cabbage into wedges while keeping the core intact.
  3. Heat olive oil in a cast iron skillet over medium-high heat and sear each wedge until golden brown on both sides.
  4. Transfer the wedges to a plate and season with salt and pepper.
  5. In the same skillet, reduce heat to medium and add butter; sauté onions until softened, then add garlic.
  6. Deglaze the pan with chicken broth, scraping up browned bits.
  7. Whisk in cream cheese until smooth, then stir in heavy cream and sun-dried tomatoes along with herbs, salt, and pepper.
  8. Simmer for a few minutes to thicken the sauce before adding grated Parmesan.
  9. Nestle cabbage back into the skillet, spooning sauce over them.
  10. Cover and bake for about 45 minutes, then uncover and bake for an additional 15-20 minutes until fork-tender.
