  • 3 garlic cloves, minced
  • 2 ½ cups low-sodium chicken broth (or vegetable broth)
  • Zest of 1 lemon
  • Juice of 1 lemon (about 2–3 tablespoons)
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley (optional for garnish)

Instructions

  1. Heat olive oil in a medium saucepan over medium heat. Add diced onion and sauté for 2-3 minutes until translucent. Stir in minced garlic for another 30 seconds until fragrant.
  2. Add the rice and stir to coat with the oil and aromatics. Toast for about 1 minute.
  3. Pour in the chicken broth, lemon juice, lemon zest, oregano, salt, and pepper. Bring to a gentle boil.
  4. Reduce heat to low, cover with a tight-fitting lid, and let simmer undisturbed for 18-20 minutes until liquid is absorbed.
  5. Remove from heat and let sit covered for an additional 5 minutes. Fluff with a fork before serving; adjust seasoning if needed.
