  • 2 chicken breasts (cubed)
  • 1 lb potato gnocchi (store-bought or homemade)
  • 2 cups baby spinach
  • 1 cup cherry tomatoes (halved)
  • 3 garlic cloves (minced)
  • Zest and juice of 1 lemon
  • 1 cup chicken broth
  • ½ cup heavy cream (or coconut cream)
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Prepare ingredients: Cube chicken, halve cherry tomatoes, and measure out other ingredients.
  2. Cook chicken: Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper; cook until golden brown (5–7 minutes). Remove from skillet.
  3. Sauté garlic and tomatoes: In the same skillet, add minced garlic and sauté for 30 seconds. Add cherry tomatoes; cook for about 2 minutes.
  4. Create sauce: Pour in chicken broth and bring to simmer. Remove from heat briefly before adding cream, lemon zest, and juice.
  5. Cook gnocchi: Stir in gnocchi; cook until tender (3–4 minutes). Add spinach just before finishing.
  6. Combine: Return chicken to skillet; mix well. Adjust seasoning as needed and garnish with fresh herbs before serving.
