  • 1 pound turkey or chicken sausage
  • 4 tablespoons olive oil
  • 1 large onion (chopped)
  • 2 large carrots (chopped)
  • 3 stalks celery (chopped)
  • 1 large red bell pepper (chopped)
  • 1 large green bell pepper (chopped)
  • 2 medium zucchini (quartered lengthwise and thinly sliced)
  • 6 cloves garlic (minced)
  • ½ cup apple cider vinegar
  • 6 cups chicken broth
  • 2 cans tomato sauce
  • 1 can diced fire-roasted tomatoes (undrained)
  • 1½ cups dried small pasta (such as shells or ditalini)
  • Fresh parsley for garnish

Instructions

  1. In a Dutch oven, brown the turkey or chicken sausage over medium heat until cooked through. Drain excess fat.
  2. In the same pot, heat olive oil and sauté chopped onion for 3 minutes until softened. Add carrots and celery; cook for an additional 4 minutes.
  3. Stir in chopped bell peppers and zucchini, cooking for another 5 minutes until all vegetables are tender.
  4. Add minced garlic and apple cider vinegar; bring to a boil.
  5. Pour in chicken broth, tomato sauce, diced tomatoes, Italian seasoning, and crushed red pepper flakes. Stir well.
  6. Return browned sausage to the pot; boil again then simmer uncovered for about 10 minutes.
  7. Add pasta and cook for an additional 10 minutes until tender.
  8. Stir in chopped parsley and season with salt and black pepper before serving.
