Ingredients

Scale
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup semi-sweet chocolate chips
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs, room temperature
  • 1 cup sour cream
  • 1/4 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1 tablespoon unsalted butter
  • 1/4 teaspoon vanilla extract
  • 1 cup whipped cream
  • 2 maraschino cherries
  • 1/4 cup chocolate shavings (or chopped chocolate)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a springform pan by greasing it and lining the bottom with parchment paper.
  2. In a bowl, mix together melted butter and granulated sugar until combined. Add in eggs and vanilla extract; stir until smooth. Gradually mix in flour, cocoa powder, salt, and baking powder. Stir in chocolate chips. Pour the batter into your prepared springform pan and bake for 20-25 minutes until a toothpick comes out with a few crumbs. Allow it to cool.
  3. In another mixing bowl, beat softened cream cheese with an electric mixer until smooth. Gradually add sugar and vanilla extract; continue mixing. Add eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in sour cream and heavy cream until smooth.
  4. Pour the cheesecake mixture over the cooled brownie layer in the springform pan. Bake at 325°F (163°C) for 55-60 minutes until slightly jiggly in the center. Cool in the oven with door ajar for about an hour, then refrigerate for at least 4 hours or overnight.
  5. In a saucepan, melt chocolate chips, heavy cream, and butter together over low heat while stirring gently until you achieve a smooth consistency. Stir in vanilla extract once melted.
  6. After chilling, carefully remove your cheesecake from the springform pan. Drizzle generously with hot fudge sauce on top. Finish with whipped cream dollops, chocolate shavings, and maraschino cherries on top. Slice into pieces and enjoy!
