  • 3 medium sweet potatoes
  • 2 apples (preferably Granny Smith or Honeycrisp)
  • 1/3 cup honey
  • 1/4 cup butter
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla
  • Optional: chopped toasted pecans for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Bake whole sweet potatoes on a baking sheet for 40-45 minutes until soft. Let cool.
  3. Peel and slice the apples; drizzle with lemon juice if desired.
  4. Remove peels from cooled sweet potatoes and cut them into 1/2-inch thick slices.
  5. In an 8×8 or 9×9 baking dish, alternate layers of apple and sweet potato slices.
  6. In a small saucepan over low heat, melt honey, butter, cinnamon, and vanilla together until combined.
  7. Pour the honey mixture evenly over the layered fruits.
  8. If using, toast chopped pecans under broil for about 5 minutes until fragrant; sprinkle on top before baking.
  9. Bake at 350°F (175°C) for about 15-20 minutes until warmed through.
