  • 1 tbsp oil
  • 2 tbsp butter (or more oil for vegan)
  • 1 tsp minced ginger
  • 1 tsp minced garlic
  • 1 cup sliced onions
  • 2 tsp soy sauce
  • Salt and black pepper to taste
  • Chopped scallion greens and toasted sesame seeds for garnish

Instructions

  1. Rinse zucchini, pat dry, trim ends, and cut into 2-inch batons.
  2. Heat oil and butter in a wok over medium-high heat.
  3. Sauté minced ginger and garlic for about 4–5 seconds until fragrant.
  4. Add zucchini and onions; sauté for 1 minute until slightly softened.
  5. Stir in soy sauce, salt, and pepper; cook uncovered for 6–8 minutes until charred yet firm.
  6. Garnish with scallions and sesame seeds before serving hot.
