  • 1 pound ground chicken breast
  • ⅔ cup uncooked white rice
  • ½ cup cherry tomatoes
  • ½ cup kalamata olives
  • ½ cup feta cheese (plus more for topping)
  • Fresh dill
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon Italian seasoning
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • ½ cup water

Instructions

  1. Preheat oven to 350℉.
  2. Cook rice according to package instructions.
  3. Slice bell peppers in half and remove seeds; place cut side up in a baking dish.
  4. In a skillet, heat olive oil over medium heat; sauté ground chicken with salt and pepper until cooked through.
  5. Add red onion, garlic, zucchini, and Italian seasoning; cook for an additional two minutes.
  6. In a mixing bowl, combine cooked rice with chicken mixture, cherry tomatoes, olives, feta cheese (reserve some for topping), and dill.
  7. Stuff each pepper with the mixture; sprinkle with reserved feta. Add water to the baking dish and cover with foil.
  8. Bake for 40 to 45 minutes until peppers are tender.
