  • 1/3 cup cane sugar
  • 2 tablespoons cornstarch or tapioca starch
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon orange juice
  • 1 1/4 cups gluten-free flour blend
  • 1 cup gluten free quick oats
  • 6 tablespoons solid coconut oil
  • 2 tablespoons pure maple syrup

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix diced peaches, cane sugar, cornstarch, cinnamon, and orange juice; set aside.
  3. In another bowl, sift together flour blend, oats, brown sugar, additional cane sugar, and sea salt. Add coconut oil, maple syrup, and coconut milk; mix until crumbly.
  4. Spread two-thirds of the oat mixture in the baking pan. Layer with the peach mixture and sprinkle remaining crumble on top.
  5. Bake for 40–45 minutes until bubbly and golden brown. Let cool before slicing.
