  • ¾ cup dark molasses
  • ½ cup unsalted butter
  • 2⅔ cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1½ teaspoons baking soda
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ½ cup brown sugar
  • ½ cup sour cream (or plain yogurt)
  • ½ cup whole milk
  • 1 large egg
  • Coarse sugar for sprinkling

Instructions

  1. Preheat oven to 425°F and prepare a muffin tray by coating it with cooking spray.
  2. In a microwave-safe bowl, combine molasses and butter; microwave until butter melts. Stir and let cool.
  3. In another bowl, whisk together flour, ginger, baking soda, cinnamon, cloves, nutmeg, and salt.
  4. Mix brown sugar, sour cream, milk, and egg into the cooled molasses mixture until well combined.
  5. Gradually add wet ingredients to dry ingredients; mix until just combined.
  6. Fill muffin tray to the top with batter and sprinkle coarse sugar if desired.
  7. Bake for 5 minutes at 425°F, then reduce temperature to 350°F without opening the door. Bake for an additional 11–14 minutes until a tester comes out clean.
  8. Cool for a few minutes before transferring to a wire rack.
