  • 1/2 cup unsalted butter (softened)
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 3 tablespoons molasses
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup rolled oats
  • 1/2 cup unsalted butter (softened) for filling
  • 4 ounces cream cheese
  • 1 1/22 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract for filling
  • 1/4 teaspoon salt for filling
  • 1 tablespoon whipping cream (if needed, half and half works too)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, ginger powder, cinnamon, baking soda, salt, and spices.
  3. In another bowl, cream softened butter with brown and granulated sugars until light and fluffy.
  4. Mix in molasses, vanilla extract, and egg until combined.
  5. Gradually add dry ingredients to the wet mixture, then stir in rolled oats until evenly mixed.
  6. Scoop tablespoon-sized portions onto baking sheets and bake for about 9 minutes until the edges are set.
  7. For the filling, beat butter and cream cheese together, gradually adding powdered sugar until smooth.
  8. Once cookies cool, spread frosting on one side of a cookie and top with another to assemble.
