  • 2 1/4 cups All purpose flour (spooned and leveled)
  • 2 tsp Baking soda
  • 1/4 tsp Salt
  • 2 tsp Ground ginger
  • 1 tsp Cinnamon
  • 1/4 tsp Ground clove
  • 1 tbsp Espresso powder
  • 1 1/2 sticks Unsalted butter (softened)
  • 3/4 cup Brown Sugar (dark or light)
  • 1/4 cup White granulated sugar
  • 1 Large egg (room temperature)
  • 2 tsp Vanilla extract
  • 1/4 cup Molasses
  • White granulated sugar (for rolling)
  • 1 1/2 cup Powdered sugar (sifted)
  • 1/4 tsp Ground cinnamon
  • 2 tbsp Strong coffee (adjust as needed)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In one bowl, whisk together flour, baking soda, salt, ground ginger, cinnamon, and ground clove.
  3. In another bowl, cream softened butter with brown and white sugars until fluffy. Mix in egg, vanilla extract, molasses, and espresso powder.
  4. Gradually combine dry ingredients into wet mixture until just blended.
  5. Roll tablespoon-sized dough portions into balls and coat in granulated sugar before placing on the baking sheet.
  6. Bake for approximately 13 minutes or until edges are set; allow to cool slightly before transferring to wire racks.
  7. For glaze: Mix powdered sugar with cinnamon and coffee until smooth; drizzle over cooled cookies.
