  • 1 can (14 oz) cherry tomatoes
  • 1 shallot
  • 4 garlic cloves
  • 2 mozzarella balls
  • 1 tbsp olive oil
  • ½ cup chicken broth
  • 3 tbsp chopped basil leaves
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp sweet paprika
  • 2 tbsp tomato paste

Instructions

  1. Preheat your oven to 200 °C (400 °F) if baking.
  2. Season chicken fillets with salt, pepper, garlic powder, and paprika.
  3. Heat olive oil and butter in a skillet over medium-high heat; cook chicken for about 5 minutes on each side until browned and cooked through. Remove and cover.
  4. In the same skillet, sauté minced garlic and chopped shallot until fragrant. Deglaze with apple vinegar and simmer.
  5. Stir in salt, pepper, dried basil, tomato paste, broth, and cherry tomatoes; bring to a boil then reduce heat to simmer for 5 minutes.
  6. Nestle the chicken in the sauce, add basil and mozzarella on top. Simmer until cheese melts or bake for about 10 minutes until golden.
