Ingredients

  • 500 g thick Greek yogurt
  • 1 tsp flaky salt
  • 1 garlic clove
  • 1/2 lemon (juiced)
  • 2 tbsp olive oil
  • Toasted pine nuts (for garnish)
  • Chopped parsley (for garnish)
  • Extra virgin olive oil (for drizzling)
  • Sumac (optional)

Instructions

  1. Lay cheesecloth in a fine mesh sieve over a bowl and pour the yogurt into it. Sprinkle with flaky salt.
  2. Press gently to drain excess liquid for about 10-15 minutes until thickened.
  3. Transfer the strained yogurt to a mixing bowl, then grate the garlic into it. Add lemon juice and olive oil.
  4. Mix well, taste, and adjust seasoning if necessary.
  5. Spread the labneh onto a serving plate and garnish with toasted pine nuts, chopped parsley, and drizzle with extra virgin olive oil and sumac if desired.
