  • 2 Tbsp unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp fine salt
  • 1/2 cup unsalted butter, room temperature
  • 1 3/4 cups granulated sugar
  • 2 large eggs, room temperature
  • 1 1/4 cups buttermilk, room temperature
  • 2/3 cup vegetable or canola oil
  • 2 squirts of green gel food coloring
  • 2 tsp vanilla extract or vanilla bean paste
  • 1 tsp white vinegar
  • 1 1/2 cups unsalted butter, room temperature (for buttercream)
  • 1/2 cup full-fat cream cheese, room temperature
  • 1 Tbsp vanilla extract or vanilla bean paste (for buttercream)
  • 1 tsp fine salt (for buttercream)
  • 8 cups powdered sugar
  • 2 Tbsp heavy whipping cream, room temperature

Instructions

  1. Preheat oven to 350°F (175°C) and grease two round cake pans.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a separate bowl, beat butter and sugar until fluffy; then add eggs, buttermilk, oil, food coloring, vanilla, and vinegar.
  4. Gradually mix dry ingredients into wet ingredients until just combined.
  5. Divide batter between prepared pans and bake for about 28 minutes or until a toothpick comes out clean.
  6. Cool cakes before frosting with cream cheese buttercream.
