  • 1/3 cup pumpkin puree
  • 1 egg (or flax egg)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a mixing bowl, combine almond meal, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together pumpkin puree and egg (or flax egg).
  4. Pour the wet mixture into the dry ingredients; stir until just combined. If desired, fold in mini chocolate chips.
  5. Fill muffin cups evenly with batter.
  6. Bake for about 10 minutes or until a toothpick comes out clean.
  7. Let cool before transferring to a wire rack.
