  • 1 pound chicken sausage (mild or spicy)
  • 3 medium carrots (peeled and diced)
  • 1 medium onion (peeled and diced)
  • 23 ribs celery (diced)
  • 1 medium red or orange bell pepper (finely chopped)
  • 7 cups low-sodium chicken broth
  • 1 can petite diced tomatoes
  • 1 ½ cups Ditali pasta (or another small pasta)
  • 1 ½ cups fresh spinach (chopped)

Instructions

  1. In a large pot over medium-high heat, crumble and cook the chicken sausage until browned. Transfer to a plate, draining excess fat from the pot.
  2. Add onions, carrots, celery, and bell pepper to the same pot; sauté for about 5-7 minutes until softened. Stir in garlic and Italian seasoning; cook for another minute.
  3. Return sausage to the pot; add chicken broth and diced tomatoes with juice. Bring to a boil, then reduce heat and simmer for 10-15 minutes.
  4. Stir in pasta; cook until al dente, approximately 10 minutes.
  5. Add spinach and stir until wilted (about 1-2 minutes).
  6. Serve hot with freshly grated cheese and basil as garnish.
