  • 1/3 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (room temperature)
  • 5 oz pumpkin puree
  • 2 & 1/3 cup flour
  • 2 tsp pumpkin pie spice
  • 3 oz cream cheese (softened)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, vegetable oil, granulated sugar, and powdered sugar until smooth.
  3. Add in the room temperature egg and vanilla extract; mix until fully combined.
  4. Gradually incorporate flour, salt, and baking powder until just combined.
  5. Scoop out balls of dough onto the prepared baking sheet and gently flatten them to about one inch thick.
  6. Bake for 8–9 minutes or until lightly golden. Let cool on the baking sheet before transferring to a wire rack.
