  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) diced tomatoes, with juice
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Brown 1 lb of ground beef in a large skillet over medium heat until fully cooked.
  2. Sauté 1 diced onion and 2 minced garlic cloves in the same skillet until the onion is translucent.
  3. Transfer the beef mixture to a slow cooker and add 1 can each of drained kidney beans, black beans, corn, and 28 oz diced tomatoes (with juice).
  4. Pour in 2 cups of beef broth and season with 1 tablespoon chili powder, 1 teaspoon cumin, 1 teaspoon smoked paprika, ½ teaspoon salt, and ½ teaspoon black pepper.
  5. Stir well to combine all ingredients.
  6. Cover and cook on low for about 6 hours or high for 3 hours. Adjust seasoning to taste before serving.
