  • 1 can (28oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup heavy cream
  • 5 oz fresh spinach (baby spinach)
  • 1/2 cup grated Parmesan cheese (plus extra for serving)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper to taste

Instructions

  1. Bring a large pot of salted water to boil. Cook the gnocchi according to package directions until they float. Drain and set aside.
  2. In a skillet or Dutch oven, heat olive oil over medium heat. Sauté chopped onion until softened.
  3. Add minced garlic and tomato paste; cook until fragrant.
  4. Stir in crushed tomatoes, oregano, basil, salt, and pepper; simmer for 15-30 minutes.
  5. Remove from heat; mix in heavy cream and Parmesan cheese until smooth.
