  • 2 small sweet potatoes
  • 1 small onion, diced
  • 200g mushrooms, sliced
  • 2 garlic cloves, crushed
  • 60g spinach
  • 1 heaped tbsp tahini
  • 1 tsp nutritional yeast
  • Juice of ½ small lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wash sweet potatoes and pierce with a fork. Place on a baking sheet lined with parchment paper and roast for about 40 minutes until tender.
  2. While roasting, heat a skillet over medium heat with a splash of water or vegetable broth. Sauté onion until translucent, then add mushrooms until softened. Stir in garlic followed by spinach until wilted.
  3. In a bowl, mix the sautéed vegetables with tahini, nutritional yeast, lemon juice, salt, pepper, and optional cayenne until creamy.
  4. Once sweet potatoes are roasted, slice them open lengthwise, fluff the insides with a fork, and fill generously with the mushroom-spinach mixture.
