  • 1 pound ground chicken
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 cups fresh spinach, chopped
  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground chicken and cook until browned (5-7 minutes). Remove and set aside.
  3. In the same pot, sauté onion for 3-4 minutes. Add garlic and cook for another minute.
  4. Return chicken to the pot and stir in chicken broth.
  5. Add heavy cream and whole milk; mix well.
  6. Season with basil, oregano, salt, and pepper; simmer for 10-15 minutes.
  7. Stir in cheeses until melted, then add spinach, carrot, and celery; cook until tender.
  8. Taste and adjust seasoning as needed before serving hot.
